Terr’s Crustless Quiche

I don’t want to lead you wrong. Is it a Crustless Quiche, is it a souffle, is it a Fritta? Make it and you decide what it should be called. Whatever you call it, this is one of my go for recipes for a regular lunch item. I make it up and I am ready for the week, it is sooooo good! Have to give credit where credit is due, I got it from a dear friend and he also makes it for me. Pretty great huh!

Ingredients of crustless quiche, it can be as healthy as you want, you decide:

Crustless Quiche
  • 8-10 eggs * see not below about 8 eggs
  • 1 C milk (1/2 &1’2 or heavy cream)
  • 2 C veggies diced (of your choice-he does all different colors of peppers), you know that peppers will provide over 200% of your vitamin C required for the day
  • 1/2 med white onion diced
  • 1 C Meat (your Choice or combo of different kinds), he uses ham steak makes it easy to cut up to the small bite size pieces and it’s pre-cooked, also it is low in calories
  • amt? Fine Cheese (your choice) do you want it in it? on top of it? or both?, we won’t talk about how many calories you could add here :}

Preparation:

  • set oven 375′
  • Chop 1/4 of each
    • yellow pepper
    • green pepper
    • red pepper
  • Chop 1/2 onion
  • Dice Ham
  • whip eggs and 1/2&1/2 half until frothy, let settle a minute
  • spray tall casserole pan (need room for mixture to raise)
  • put ham on the bottom
  • slowly pour egg mixture into the bowl
  • drop veggies into the mixture and press down if needed
  • sprinkle with cheese if you like

Bake 45″ @ 375′

I love this recipe because i get all my veggies eating this quiche. I love the light fluffy of the egs so, good and how they compliment with the wine. Unbelievable. Later I decided the way to prepare this in little custard cups (don’t forget to spray the cups with some cooking spray)zzz then I can just grab one and put it in the microwave and wow I have a supper delicious quick breakfast. Enjoy!

Also this is a great dish to serve when you have someone over for nice dish. Just through in a loaf of bread, some fruit, some wine, and some flowers on the table. People will be so impressed with your great culinary skills.

Ready to Eat

** when only using 8 eggs you will probably find some excess moisture in the bottom of the pan. Just cut out one piece and dab out with paper towel or increases to 10 eggs which lowers the moisture.

Also a great way to get the kids eat some veggies. Maybe,the fluffy eggs will make them ignore all of the veggies

Yes, this a great breakfast, brunch, or dinner entree to be served with fruit, a newly baked loaf of bread, or a nice of bottle wine such as a Smith & Son Sauvignon Blanc out of California, 2018. I found it to be great with it when we had Brunch the other day. Enjoy! Also wanted to let you know I fell in love with a having a Tanya Pinot Grigio. Just think of it you could have all of the different FINE wine coming to your door every month.
